Day 22 of the Drinks by the Dram WhiskyAdvent Calendar 2015. Only 2 more days to tick off before Christmas, we make a sidestep to the middle-Americas with this Nicaraguan rum-cask finished Irish whiskey.

.teeling - 15yo - revival

To mark the opening of their own distillery in the heart of Dublin, Teeling Whiskey Company has released the Revival, a 15yo single malt, distilled in 1999 and exclusively matured in ex-Rum casks.

.teeling - single malt - third release

After 23 attempts, master blender Alex Chasko was satisfied with the balance of the flavours in this third release in the Premium range of Teeling expressions. Completing their full range of non aged Irish whiskeys, this release consists of a vatting of five different wine casks including ex-Sherry, ex-Port, ex-Madeira, ex-White Burgundy, ex-Cabernet Sauvignon finished Irish Malt whiskeys.

"This Gold bottling of 26 Year Old Irish Single Malt is limited to only 1,000 bottles and comes from a handful of casks selected for their unique quality. Distilled in 1987 and initially matured in bourbon barrels for 25 years this whiskey is given extra maturation in French white Burgundy wine casks for a further 12 months to add an extra layer of complexity. This unique marrying process creates a beautiful bouquet of tropical fruit flavours that complement the deep layered malt and wood noted in the long decadent finish."

46% abv, €125, single malt, non-chill filtered, natural colour

Nose: leather, sweet, slight peat smoke, salted parma ham, liquorice, eucalyptus, sweet, caramel, citrus,
Palate: sweet, spicy, vanilla, sweet, clover honey, floral, violets, nuts, rubber, fresh apricot, struck match, slight smoke, powdered sugar, citrus, pineapple, papaya (slight soapy)
Finish: floral, violets, bananas, long, complex, papaya, peat smoke
Mark: ++++/+

Conclusion: Complex, but very nicely balanced stuff. A bit pricy, but for a limited and rare whisk(e)y I have seen and paid larger amounts of money.

More info: the 21 year old has initially matured in ex-Bourbon barrels and is finished in ex-Sauternes wine casks, limited to 5000 bottles. There is a small percentage of peated malt used in the double distillation of this Irish single malt.

All Teeling whiskies are bottled at at least 46%, non-chill filtered and there is never any colorant added, because "we just think it makes a better whiskey" ...gotta love 'em for that.

Jack continues on the Teeling’s entrepreneurial spirit and while initially starting out as an Independent bottler and aims to get back into the distilling game to ensure a constant supply of Irish whiskey.

.teeling - single grain

46% abv, €40, single grain, non-chill filtered, natural colour

Nose: sweet, vanilla, marzipan, spicy, hard green herbs, wet grain, hay, nuts, almonds, creamy, butter, brambles, milk-chocolate with soft caramel, (Rollo™), vanilla scented candles, more grain
Palate: sweet, vanilla, white chocolate, strong, sharp, spicy, dry grass, fruit, berries, citrus, pomelo, grapefruit, blood oranges
Finish: medium long, smooth, gentle, spicy, almond, speculaas biscuits, ginger
Mark: +++/++

Conclusion: Very likeable. Sweet and gentle like most single grains, but because of the ex-wine cask maturation, this has received extra layers of spice and fruit notes that makes it rather unusual but enjoyable. The only other Irish single grain whiskey is Greenore which is very different beast as it has undergone a full maturation in ex-Bourbon barrels.

More info: This particular single grain is double distilled from maize and has fully matured in ex-Californian Cabernet Sauvignon wine barrels.
